What is the best cookware for your kitchen and what should you consider when buying it for your kitchen? When shopping for pots, pans and other cookware some people are only concerned about the aesthetic and whether or not it is the color to match the rest of their kitchen décor and there is absolutely nothing wrong with that approach.

However if you take your cooking seriously you will most likely want to take a more functionally approach when choosing the best type of cookware for your kitchen.

One of the key things to consider when choosing pots, pans, or any type of cookware set is the material that it is made from.

Some of the best rated cookware for heat conduction is copper but it is expensive and is reactive to certain acidic foods.

Copper, to some degree cast iron and aluminum react to certain acidic foods like tomato sauce which may change the flavor or color of the food you are preparing. The one exception to this would be anodized aluminum, which does not react to acidic foods.

So what would be the best cookware to buy for your kitchen? In my opinion the most versatile cookware for the kitchen is made of stainless steel. It will not pit or corrode and doesn't react with acid.

However it does not conduct heat efficiently so in the higher quality pots and pans some manufacturers will sandwich aluminum between the internal and external layer of the stainless steel. This greatly increases heat conduction and efficiency of the stainless steel cookware.

In my opinion I think the best cookware sets are ones that offer basic shapes and sizes and the handles and lids are all metal. The reason why I prefer all metal handles and lids is because you can start your cooking process on the stove top like searing or sautéing and then finish the cooking process in the oven or under the broiler all in one pot or pan.

Also it has been my experience that even after you have purchased the best type of cookware for you cooking needs, there will always be a few specialty pieces that you may need to purchase in order to supplement your set.

Tarragon: A Favourite of French Chefs

Long a favourite of French chefs, the herb Artemisia dracunculus, known as French tarragon or dragon herb is an essential ingredient in Béarnaise sauce, tarragon vinegar, and certain Dijon mustards. A perennial herb, tarragon grows 2 - 4 feet (60 - 120 cm) and has dark, shiny, narrow grey-green leaves about 3 inches (8 cm) long with smooth edges. Tarragon produces tiny yellow flowers and has stems that are ridged, round, branching, and light green. Tarragon is rich in Vitamin A, thiamine, riboflavin, niacin, calcium, and potassium, and has a mild anise flavour in its leaves.

Although it is not the easiest of herbs to grow, tarragon can be grown in containers. Plant into a pot 8 inches (20 cm) in diameter or larger. Purchase plants from your greenhouse, garden catalogue, or propagate by cuttings or root division. Do not purchase seeds, as they are generally sterile. If potting up outdoor plants for indoor use, plant by mid-summer. The plants should be exposed to cold, at least 4° C (39° F) for a month before bringing inside, as the plants require a period of dormancy.

Tarragon grows best in full sun although it will tolerate filtered sun. This plant likes warm, dry, well-drained, light soils. Do not overwater as tarragon is susceptible to root rot in soggy soil. Indoors, tarragon requires 5 hours of direct sunlight a day. Place in an eastern or southern exposure and turn plants frequently to ensure all sides receive equal light. If growing under fluorescents, hang lights 6 inches (15 cm) above plants and leave on 14 hours a day.

In the garden, tarragon is a good companion to all plants. In the kitchen, tarragon is something very special and particularly good for flavouring vinegar. To make tarragon vinegar, place a large sprig in a sterilized bottle or glass jar, bring white wine vinegar to a boil and pour in enough to cover. Seal and store away from light. In addition to the above, other uses for tarragon include: hollandaise sauce, tartar sauce, vinaigrettes, seafood salads, dressings for tossed green salads, tomato soup, chicken broth, seafood cocktails, scrambled eggs, omelettes, spinach and mushroom dishes, meat dishes, fish, veal, poultry, mustard sauces, and quiche. Add a few leaves of tarragon to the boiling water of spinach, tomatoes, peas, cauliflower, and cabbage to enhance their flavour. When steaming vegetables such as potatoes, cauliflower, zucchini, peas, and summer squash, season them with tarragon butter. To make tarragon butter, mix together 2 tbsp. (30 mL) butter to 1 tsp. (5 mL) finely chopped tarragon, 1 tsp. (5 mL) freshly squeezed lemon juice, and sea salt to taste. This butter can be stored in the freezer.

Use tarragon sparingly as it has a flavour that diffuses quickly through dishes. Add the leaves when your dish is just about ready to serve as tarragon takes but a few minutes of cooking time. Tarragon can be stored fresh in a plastic bag in the refrigerator, frozen in ice cubes trays, or preserved in white wine vinegar or oil and packed in sealed, sterilized jars. Tarragon can also be dried in a warm, well-ventilated place. Strip the leaves from the stems before storing. Dried leaves should be kept in a cool, preferably dark place in airtight containers.

The Benefits of Cooking With Copper Cookware

Once you cook with copper cookware for the first time, you're unlikely to go back to anything else. It's no wonder why all great chefs have a few pieces of copper cookware in their collection.

There are many benefits to cooking with copper. The first being that copper is an amazing conductor of heat. For anyone who has ever cooked with copper, they know that you rarely turn the stove higher then a medium low to get very high heat. Which makes copper great for all your sauteing needs.

I always laugh when I see "green" cookware or cookware made with all "natural" ingredients. Copper is and will remain the most environmentally friendly cookware for more reasons then one. First, copper is a natural product already. It takes just a little heat to turn a copper in its original state into a pan.

Second, you will use a lot less energy cooking with copper cookware. For recipes that used to require your stove to be on a medium high, now will require your stove to be on medium low or low. For anyone who cooks a lot, that can be a large reduction in your electricity bills.

The only type of cookware that is close to having equivalent heat conduction of copper is cast iron cookware. The one problem I have always had with cast iron is the maintenance. Doing dishes is already a lot of work, the last thing I want to add is routine maintenance to my pots and pans.

Which brings us to the argument of tin vs. stainless steel. Most copper pans come with a lining. The two options you're likely to run into are tin and stainless steel.

I will be the first to admit, that tin is a better conductor of heat than stainless steal. However, tin does require a lot more maintenance than stainless steel. Therefore, I enjoy copper cookware lined with stainless steel.

For anyone who has ever owned a stainless steel cookware set, they know how little maintenance is actually requires. Therefore, if you buy copper cookware with a stainless steal lining, you maintain those pans as if they were stainless steel. Which means very little maintenance is actually required to own some of the best quality pans.

Before buying a copper cookware set, here's what I would think about. If you're reading this article you're likely new to cooking with copper. Go ahead and buy one or two pieces of copper to start out with. A medium sized sauce pan and a skillet is a good way to start a collection. Once you get used to cooking with copper, you can than move onto a set if you desire.

As a bonus, here is a few of my best tips for cooking, cleaning, and caring for copper cookware:

* Practice simple recipes at first to get used to the difference in heat

* Always start your copper pans on low heat

* Never add salt to an empty pan or non-boiling water

* Wash in hot soapy water and immediately

Legasse endorses Emerilware which performed well in all the categories. The brand name that stands behind him has excellent cookware. Emerilware Cookware is constructed from heavy gauge aluminum with a tough enamel exterior for long-lasting style in the kitchen. The cookware has a durable enamel.

Rocco DiSpirito , star of the Food Network series, introduced Rocco Cookware "for
serious chefs". The collection is the first cast aluminum cookware collection with a porcelain interior and exterior The cookware has his signature fashion colors and bold design. Additionally, Rocco is debuting a collection of pressure cookers and new low-pressure cookware sets that take "cooking under pressure" to the next level.

For non-celebrity cookware, heavy gauge stainless steel is the best high-end cookware. Stainless steel is a good choice for use with gas ranges and the cookware is oven-safe to 500 degrees Fahrenheit. The nonstick version is a very good good choice.
